A different starting point

Most journeys begin with a place to stay. Ours begin with a question: which table would make you change the route? Not necessarily the most expensive table. Not the one with the longest menu. The one that makes somewhere feel specific, rather than interchangeable.

Fine Dining Croatia is built around that question. We are interested in what happens when a kitchen takes its surroundings seriously, when a dining room has a point of view, and when the meal becomes part of the reason to travel. A beautiful view may open the conversation. It should not be the whole conversation.

Beyond the photograph

A plate can look convincing in a photograph and tell you very little about an evening. The pace of service, the balance of a menu, the generosity of a conversation and the freedom to ask a simple question are harder to capture. They are also worth taking seriously.

That is why this publication is organised around stories, not scores. A researched restaurant portrait explains a proposition and helps you decide whether it fits your journey. It is not a substitute for a firsthand review. Where we have not visited, we say so. Where information may change, we direct you to the restaurant.

The meal and the day around it

Our idea of a dining journey leaves room around the reservation. Time to arrive without rushing. Time to understand a place before sitting down. Time afterwards that is not immediately swallowed by a transfer, a ferry or the next appointment.

We would rather suggest one considered evening than an itinerary crowded with competitive meals. A tasting menu is not a sporting event, and a holiday should not feel like a collection of receipts. A simple lunch and an unplanned walk can be exactly the right counterpoint to an ambitious dinner.
